Spinach Salad with Balsamic Vinaigrette
- 10 oz. Baby spinach washed and dried
- 5 oz. Goat cheese crumbled- can substitute cheese
- 1/2 Cup Toasted walnuts
- 1/2 Cup Craisins
- 1/2 cup Balsamic Vinegar
- 1/2 cup olive oil
- 1 Tbsp dijon mustard
- Salt and freshly ground black pepper
Add dijon mustard and balsamic vinegar to a salad dressing bottle (or mason jar) and shake to combine.
Add olive oil and shake vigorously.
Season to taste with salt and pepper. Shake and refrigerate until ready to use.
