Spinach Salad with Balsamic Vinaigrette

  • 10 oz. Baby spinach washed and dried
  • 5 oz. Goat cheese crumbled- can substitute cheese
  • 1/2 Cup Toasted walnuts
  • 1/2 Cup Craisins
  • 1/2 cup Balsamic Vinegar
  • 1/2 cup olive oil
  • 1 Tbsp dijon mustard
  • Salt and freshly ground black pepper
  1. Add dijon mustard and balsamic vinegar to a salad dressing bottle (or mason jar) and shake to combine.
  2. Add olive oil and shake vigorously.
  3. Season to taste with salt and pepper. Shake and refrigerate until ready to use.
